Pork Balls & cabbage

I want to start documenting the dinners I make for my man and I. Here is what I made a few nights ago. It is a colorful dish that is super easy and gluten free! As you can tell based on this post, I have a weird affinity for cabbage. I seem to have it quite often. This particular cabbage preparation is supppppeerrrr easy, and involves zero baking. It also gets better with time as the acid from the vinegar breaks down and releases flavor. I suggest making it earlier in the day and prepare the meat balls when you are ready to eat. Also these pork meat balls are great sans cabbage. Stab them with a few toothpicks and you have yourself a fun appetizer! 


CABBAGE SLAW RECIPE
1/2 head of cabbage
1/2 head of red cabbage
green onions (5)
3/4 slivered almonds
1/4 cup sesame oil
1/4 cup plus 2 tbls apple cider vinegar
1 tbls honey
1 tbls coconut oil
pepper to taste

DIRECTIONS
Mix shredded cabbage, green onions and almonds. In a small bowl whisk together remaining ingredients. Pour over salad and mix until well coated. Adjust seasoning as your palette desires : )

PORK BALL RECIPE
1 lb ground pork
1 egg
1 egg yolk
1/2 cup almond flour
1 jalapeno, finely diced
2 green onions 
cilantro (handful)
2 tbls sesame oil

Preheat oven 350F
mix pork, egg, yolk and almond flour together. Mix in the rest of the ingredients. Line baking sheet with parchment paper (works with out, i didn't have any) scoop out about one inch balls on the baking sheet. Cook for about 15 minutes and then broil to brown the tops.
