I made this friday for dinner, but it is also the perfect app for tailgating!


INDGREDIENTS
- 2 cups of corn
- 1 can beans (black, pinto or refried)
- 1 (10oz) package frozen spinach (thawed & squeezed dry)
- 3 chile's in adobe sauce (supers spicy so add or remove to your taste buds)
- 2 tsp. cumin
- .25 tsp. cayenne pepper
- 1 package of egg roll wrappers
- salt and pepper to taste





DIRECTIONS
Mix all the above ingredients (except the egg roll) in a large bowl. Mix well. Lay an egg roll wrapper out and place about .25 cups in the center. Fold the point closest to you over the filling and roll a bit, then take the points outward and fold them toward the center. Continue rolling until the remaining point is free. Work this point and lose edges with the egg whites. Repeat.

Preheat oven 425˚ F. Coat with cooking spray and place egg rolls on the back sheet. Spray cooking sprat on top of the rolls. Bake for 15 min. *I broiled for a minute after baking (optional)

Serve with some salsa and ENJOY!
